Eggs & Oats–My Favorite Post Workout Breakfast

The idea of mixing eggs into your oats while you were cooking them honestly freaked me out, but I’m so glad I tried it. I workout a few mornings a week and then have to get right to work so this is my favorite breakfast to make ahead of time to have on hand.

Eggs & Oats Recipe

*Makes 3 servings

Ingredients:

  • 1.5 cups of Organic Gluten Free Oats (dry)
  • 3 cups Filtered Water
  • 6 Whole Eggs
  • 3 scoops Paleovalley Bone Broth Protein
  • 1 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract (optional)

Instructions:

  1. Add water to a medium size pot and bring to a boil.
  2. Once boiling, mix in oats and turn down to medium heat.
  3. Let the oats cook for a few minutes, when they are almost done turn them down to low for 1-2 minutes.
  4. Whisk your eggs and slowly add them in while mixing to your oats. Once they are all in mix one more time so they are fully incorporated.
  5. Add in your bone broth protein, cinnamon, and vanilla and mix until everything is evenly incorporated.
  6. Separate into three glass storage bowls. Top with berries if you want when you go to eat!
