Chipotle BBQ Shredded Chicken Stuffed Sweet Potatoes

Do you need an easy food prep recipe that you can change a few ingredients in to have a whole new meal each week? I did too. That’s where this recipe came from. Crockpots make cooking incredibly easy. For this recipe, you add all ingredients listed and cook on low for 6-7 hours (the more chicken the longer it cooks–max is 8 hours). All you do for the sweet potatoes and wash and bake in the oven. Doesn’t get much easier than that!

I used Bone Suckin BBQ sauce because it is my favorite. Their hot version is also delicious. I found it at Stop and Shop but you can also get it online. I linked to a recipe for BBQ sauce if you can’t find a good one.

Here are some ingredients to avoid when looking at labels:

• Sugar (anything that ends in “ose†or dextrin)

• High fructose corn syrup, corn syrup

• Canola, soybean, vegetable, sunflower oils

• Soy (tofu, soy sauce)

• Gluten (wheat, whole grain, wheat germ)

• MSG (glutamic acid, glutamate, monosodium glutamate, calcium glutamate)

• Carrageenan (algas, algue rouge marine, carrageen, chondrus extract)

Chipotle BBQ Shredded Chicken Stuffed Sweet Potato


• 1.5-2lb Organic Chicken Breasts

• 4-8 Organic Sweet Potatoes

• 1 small Sweet Onion, chopped

• 1/2 cup Bone Suckin BBQ Sauce (or make your own; this is a good recipe)

• 2 cloves Garlic, minced

• 2-3 Chipotle Peppers in Adobo, chopped (can be found at most grocery stores)

• 1-2 tsp Smoke Paprika

• Dash of Sea Salt



1. Place chicken breasts in crock pot and cover with sea salt and smoked paprika.

2. Top chicken breasts with onions, garlic, BBQ sauce, and chipotle peppers. Cook on low for 6-7 hours.

3. Preheat oven to 350 degrees and bake whole sweet potatoes for 1 hour.

4. When chicken is done, shred up using two forks and add in any other spices you want.

5. Cut sweet potato in half and mash it up, top with butter/coconut oil and shredded chicken.

Other Flavor Ideas

You can easily substitute other ingredients and completely transform this recipe into multiple meals.

• Mexican Shredded Chicken: add salsa, chopped onion, garlic, and cilantro

• Balsamic Herb Shredded Chicken: add Italian blend seasoning, balsamic vinegar, garlic, and olive oil

• Lemon Garlic Shredded Chicken: add lemon juice, zest, garlic, oregano, and olive oil

• Buffalo Shredded Chicken: add onion, celery, hot cayenne pepper sauce (frank’s red hot), garlic, and chicken stock
