Chocolate Coconut Bites

One of my go to snacks or treats are these chocolate coconut bites. They are very satisfying if you are craving something sweet and perfect to eat before or after a hard workout. The best part is that you only need 5 ingredients AND there is no baking involved.

 I made these for an event at my friend’s gym (CrossFit Override) and they were a hit! Even the little kids couldn’t stop coming back for more.

 

Ingredients:

• 10 Dates, pitted

• 3/4 cup Unsweetened Coconut Flakes

• 1/3 cup Raw Cacao Powder

• 1/2 tsp Vanilla Extract

• Pinch of Sea Salt

Instructions:

1. Add dates to blender or food processor and blend until a paste forms.

2. Break up the paste and then add the rest of the ingredients.

3. Blend until evenly incorporated. Store in an airtight bag or container in fridge for 2-3 weeks and in the freezer 1-2 months.
